Ahi Tuna Poke

8 oz. raw Ahi tuna (sushi grade)
1 tsp. lemon zest
1 tsp. olive oil
a pinch of cayenne pepper
juice from half a lemon
½ tsp sea salt
½ tsp fresh ground black pepper

Mix above ingredients well and let marinate for 10-15 minutes.

6 prawns, cut into thirds
1 fresh papaya
½ fresh pineapple
8-10 fresh strawberries
½ fresh avocado
¼ cup shelled pistachios, chopped
½ tsp sea salt
½ tsp fresh ground black pepper

Cut papaya, pineapple, strawberries, and avocado into ½-inch pieces. Mix all the above ingredients, except the avocado, then add the avocado and mix gently.

Place one quarter of the mix on a plate, top with a quarter of the marinated tuna, and garnish.
