Ahi Tuna Poke
| 8 oz. | raw Ahi tuna (sushi grade) |

| 1 tsp. | lemon zest |
| 1 tsp. | olive oil |
| a pinch of cayenne pepper | |
| juice from half a lemon | |
| ½ tsp | sea salt |
| ½ tsp | fresh ground black pepper |
Mix above ingredients well and let marinate for 10-15 minutes.

| 1 | fresh papaya |
| ½ | fresh pineapple |
| 8-10 | fresh strawberries |
| ½ | fresh avocado |
| ¼ cup | shelled pistachios, chopped |
| ½ tsp | sea salt |
| ½ tsp | fresh ground black pepper |
Cut papaya, pineapple, strawberries, and avocado into ½-inch pieces. Mix all the above ingredients, except the avocado, then add the avocado and mix gently.
Place one quarter of the mix on a plate, top with a quarter of the marinated tuna, and garnish.
