Quinoa Tabouli
| 1 cup | dry quinoa |
|---|---|
| 1 tsp. | dried oregano |
| 1 tsp. | dried basil |
| 1 tsp. | sea salt |
| ½ tsp. | fresh ground black pepper |
| 1 tbsp. | balsamic vinegar |
| 2 tsp. | honey |
| 2 tbsp. | fresh parsely, chopped |
| 1 | vine-ripened tomato |
| 1 | red bell pepper |
| 1 | yellow bell pepper |
| ½ | large white onion |
To make the quinoa, add 1 cup of dry quinoa to 3 cups salted boiling water. Reduce to a simmer and cover for 10-15 minutes or until all the liquid is gone. The quinoa should be tender.
Cut tomato, bell peppers and onion into 1/4 inch pieces. Add the ingredients together and mix thoroughly.
Serve chilled. Enjoy!
